Great Healthy Hummus with Roasted Red Pepper and Mixed Herbs

If you dislike the taste of chickpeas, it is a better option of the traditional one.
The herbs and the roasted red pepper cover the chickpeas flavour. Plus due to the water content in parsley, coriander and pepper, the consistency is much smoother

I suggest you find the best recipe to meet your personal taste, but here are the quantities of the ingredients I used for the recipe in the video

Ingredients:

1 can of 400 gr of chickpeas
1 lemon squeezed
40 gr of Fresh Coriander
40 gr of Fresh Parsley
1 red capsicum Pepper
1 Clove of garlic
2 spoonful of Tahini Paste
20 ml of Extra Virgin Olive Oil

First, start to roast the pepper in the oven at about 200 degrees Celsius for an about 20 minutes (but check it from time to time to avoid to burn it).

Start by grinding chickpeas, coriander, parsley, olive oil and lemon juice together.

At the beginning use the Pulse function (if you have it) on your food processor. So to avoid food to stick on the food processor walls.

Then add the tahini paste and the clove of garlic and continue to grind. Stop once in a while to move with a spoon all the paste that stuck on the food processor

At the end take the pepper, remove the skin (be careful not to get burned) and add it to the rest of the ingredients.

Process everything for a little while until smooth

You can enjoy this Hummus, with some rice cakes, bread, pitta.

Or to your wraps.

It is delicious.
